Ingredients

  • 4 peppers, seeds removed and cut into large pieces
  • 2 red onions, peeled and quartered
  • 3 medium potatoes, washed and cut into 2cm dice
  • 1 whole 390g chorizo sausage, sliced thickly
  • 4 tomatoes, halved
  • 2 tbs oil

Preparation

  • Preheat oven to 220 C. Put all of the vegetables, except the tomatoes into the Pyrex Irresistible Roaster and drizzle with oil.
  • Cook in the oven for 35-40 minutes, then turn the vegetables over, add the chorizo and tomatoes and cook for a further 15-20 minutes until lightly browned
