Cod fillets "A la Provençale"

The ingredients
  • - 4 thick cod fillets 150 g each
  • - 2 zucchini cut into slices
  • - 1 eggplant cut into slices
  • - 3 tomatoes cut into slices
  • - 1 big onion finely sliced
  • - 2 cloves of garlic pressed
  • - 2 tablespoons of olive oil
  • - 1 bouquet garni
  • - Salt, ground pepper to taste
Preparation

1. Preheat oven to 200°C

2. In the rectangular dish, place the slices of vegetables and onion so that they overlap.

3. Place the cod on the vegetables, sprinkle with the pressed garlic, the herbs, salt and pepper to taste and the olive oil.

4. Cook in hot oven for about 45 min.

Tips
The cod can be replaced by other fillets of white fishes or by whole fish such as bass or sea bream (800 g to 1 kg).
