The ingredients
  • - 60g grated mature cheese
  • - 60g cold butter in small cubes
  • - 60g gluten free flour
  • - 30g grated parmesan
  • - Pinch of paprika or cayenne pepper
  1. 1. In a Pyrex bowl, rub the cheeses, butter and flour together with fingertips until they are fully incorporated together. Knead briefly.
  2. 2. Form into 20g balls and gently flatten the balls onto the Pyrex oven tray lined with parchment. Leave plenty of space in between each biscuit. 6 portions on each tray is perfect. Chill the tray in the fridge for at least 30 minutes.
  3. 3. Place the trays in 180°c oven and bake for 15 minutes.
  4. 4. Whilst they are warm cut the biscuits with a cookie cutter and sprinkle with paprika or cayenne pepper.
