Chocolate chip brioche casserole

Prepare a soft brioche with casserole cooking for an airy crumb, a crispy crust and a delicate flavor.

  • 500g of flour
  • 20g of fresh baker's yeast
  • 120ml milk
  • 60g heavy cream
  • 50gpowdered sugar
  • 80gbutter
  • 1bag chocolate chips
  • 1pinch of salt

Recipe

Stage 1

In a salad bowl, beat 2 eggs and the crème fraîche. Crumble the yeast, pour in the milk. Add the flour, sugar and salt. Knead for about 15 minutes

Stage 2

When the dough begins to form a ball, add the butter cut into pieces. Knead again.

Stage 3

Form a ball and let rise overnight in the refrigerator or 2 hours at room temperature.

Stage 4

On a well-floured work surface, add the chocolate chips, knead again at by hand. Divide the dough into 6 pieces of dough.

Stage 5

In the casserole dish, arrange the dough pieces to form a flower.

Stage 6

Close the casserole dish and let it rise for 1 hour at room temperature or in the turned off oven.

Stage 7

At the end of proofing, brown the brioche with the egg yolk. Replace the lid. Bake at 180°c for 40 min.

Stage 8

If the brioche touches the lid, remove it and continue cooking.

Stage 9

Unmold the brioche when it is very cold.
