  • 6 parsnips
  • 4 potatoes
  • 1 onion
  • Leftover turkey
  • 25cl milk
  • salt/pepper

Stage 1

Preheat the oven to 250°c.

Stage 2

Wash, peel (keep the peelings for a future vegetable stock or chips - if organic), chop them and steam cook for 30 min.

Stage 3

Reduce puree, add the milk, salt and pepper. Set aside.

Stage 4

Chop the onion and brown it in a pan. Add the chopped turkey.

Stage 5

Place the turkey at the bottom of the dish and add the puree potatoes on top.

Stage 6

Put in the oven for about 30 minutes.
