    Ingredients

    For the salad:

    • 2 medium carrots, grated
    • 2 yellow peppers, thinly sliced
    • 100g baby spinach leaves
    • 4 medium tomatoes, sliced
    • ½ cucumber, sliced
    • 60g pack mixed seeds
    For the dressing:
    • 100ml Olive oil
    • 50ml White wine vinegar
    • 1-2 Tsp wholegrain mustard
    • Pinch of sugar
    • Salt and pepper to taste

      Preparation

      1. Layer up the vegetables in the a glass bowl and scatter the seeds over the top.
      2. Prepare the dressing by mixing all of the ingredients together in a jar, shaking really well and serve with the salad.
