Ingredients

  • 1 small pumpkin
  • 1 butternut squash
  • 2 red onions
  • 4 potatoes
  • Fresh goat’s cheese
  • 1 tablespoon butter for the dish
  • Olive oil
  • 2 tablespoons of honey
  • A pinch of cayenne pepper
  • Aromatic herbs, salt, & pepper

Preparation

  1. Preheat the oven to 200°c, and butter the Pyrex® dish.
  2. Peel the ingredients, then chop the pumpkin, the butternut squash, the potatoes, and the onions into thin slices, using a mandolin or a knife.
  3. In the dish, aesthetically place your vegetable slices as tightly together as possible, before drizzling a generous amount of olive oil over the top. The olive oil will make your vegetables really melt in the mouth.
  4. Add the two tablespoons of honey on top, along with salt and pepper, a pinch of cayenne, and a further pinch of aromatic herbs.
  5. Put in the oven for 45 minutes at 200°c, when it’s take out, sprinkle a few crumbs for fresh goat’s cheese over the top – and enjoy!
